Gluten-Free Turkey Lasagna

Can you say Yum?  YUM!

Can I get a Hell-Yeah?  HELL YEAH!

Many have asked for this recipe and since I am feeling so generous I thought I’d lay it out for all ya. Super simple – super yummy – a family favorite, here is my Lean Turkey Zucchini Lasagna. Bam!

Ingredients

  • 1/2 red onion diced
  • 2 cloves of garlic diced
  • 1lbs lean ground turkey
  • 1 cup of organic pasta sauce + 2 tbsp for later
  • 2 medium zucchini sliced in long thin pieces
  • 1/2 cup spinach
  • 2 tbs olive oil
  • 1/2 cup of fresh or frozen sweet corn
  • Salt and pepper
  • 1/4 cup of ricotta cheese (optional)
  • Cheddar cheese (optional)

Directions

  1. Chop the onion and garlic.

  2. In a small skillet with a splash of olive oil, cook the onion (3 minutes), add the garlic and cook for another 2 minutes.

  3. Add the turkey to a large skillet and cook on low heat. When the turkey is almost cooked, add the onion and garlic. Add salt and pepper to taste. Simmer for 3 minutes.

  4. Now, add the 1/2 cup of pasta sauce to the turkey mix. Simmer on low for 7 minutes.

  5. Using the same skillet used for onion garlic, warm the corn.

  6. While that’s cooking, slice the zucchini into long thin pieces and cook for 1-2 minutes on a skillet.

  7. Add 1/2 tbsp of olive oil to the bottom of a 6.5 X 9 inch baking dish.

  8. Place the first layer of half cooked zucchini down.

  9. Add a layer of uncooked spinach.

  10. Add a layer of the turkey mix.

  11. Add a layer of zucchini.

  12. Add a layer of ricotta cheese (crumbled), corn and some salt and pepper.

  13. Add a layer of zucchini.

  14. Add a layer of turkey mix.

  15. Add the top layer of zucchini.

  16. Top it off with 2 tbsp of pasta sauce and a sprinkle of cheddar cheese to taste.

  17. Bake for 20 minutes at 350.

To Freeze:

Follow the above steps closely, cook all the way through, then let cool to room temperature. Place in a freezer safe glass container and store for up to three months.

To cook:

Thaw all the way through in the fridge over night. Set oven to 350 and cook for 20 minutes.
